Coryfo pays homage to the rich culinary heritage of Corfu and Greece, reinterpreted through a modern, creative lens. Every dish is crafted using fresh, local ingredients — many sourced directly from the Apollo Palace Organic Farm — and showcases a deep respect for authenticity, sustainability, and seasonality.
The menu reimagines classic recipes with a refined twist, featuring dishes such as:
- Beef cheek braised in the style of a traditional Corfiot sofrito,
- Corfiot bourdeto giouvetsi with seafood "stones" and handmade manestra pasta,
- Free-range cockerel with traditional Mista pasta and mushrooms,
- and the beloved pastitsada, transformed into a rich spiced sauce over slow-roasted organic chicken breast.
Desserts highlight the island’s sweet legacy, from caramelised tsoureki with Greek coffee ice cream, to cannolo with kumquat gelato and cardamom-scented white chocolate.
